    Went back here again on my last night in Lyon. The beef salad tartare was excellent!  Another meal I have not had since I was a kid and my mom made it. Sometimes hard to find, especially in USA, since there is not a popularity with eating rare meat. This is cooked similar to ceviche in just lemon juice. One thing I would recommend is to ask them to go with more lettuce and less onion.
